Herb Breaded Alaskan Halibut

  • 1 cup panko breadcrumbs
  • ½ bunch fresh parsley, chopped
  • ½ bunch fresh thyme, picked and chopped
  • ½ bunch fresh rosemary, picked and chopped
  • 3 TBSP olive oil
  • 2 Alaskan Halibut fillets
  • salt & pepper to taste

  • 1. Preheat oven to 350°F
  • In a small bowl, mix the panko, chopped herbs, and a pinch of salt & pepper.
  • Season the fish liberally with salt & pepper on both sides.
  • Heat an ovenproof pan with olive oil over a medium-high flame. Once the oil starts to smoke, place the fish into the pan and sear on one side to get a golden color.
  • Once you have the golden color (after about 1-2 minutes) flip the fish and generously stack the breadcrumb mixture on top of the seared side of the fish and finish cooking in the oven for 5-10 minutes or until breadcrumbs are light brown in color.
  • To serve, transfer fish to plate with spatula.

  • Recommended Side: Garlic mashed potatoes
